I was on a flight from Seattle to Phoenix and saw circles of grass growing in the desert. What are they for

I was on a flight from Seattle to Phoenix and saw circles of grass growing in the desert. What are they for?
Who grows and maintains them?

The circles are crops, anywhere from wheat to corn. The irrigation sprinklers are on a long pole that rotates around an axis. That is why the crops are circular.

They sound like Water Reclamation filters. In low-water areas, sewage water is recycled into drinking water. One of the steps is to "purify" the water by running it though live biological filters such as plants. THAT may be what you saw in the circles. Some plants can live on the "crap" in the water, breaking it down into more water, and other non-toxic materials. Note that these are NOT crops, like corn or wheat. THOSE fields are SQUARE.
